Chicken Noodle Stir Fry

About the Recipe

A great way to get a healthy high protein meal. I use this recipe for meal prep on 3 days of the week.

Ingredients

  • 1kg chicken breast(cut into small chunks)

  • 500g fresh noodles

  • 1 red pepper(cut into strips)

  • 1 yellow pepper(cut into strips)

  • 2 small red chillies(finely chopped)

  • One handful of mange tout

  • 2 cloves garlic(finely chopped)

  • Thumb sized piece of fresh ginger(grated)

  • 2 tablespoons of dark soya sauce

  • 1 tablespoon of oyster sauce

  • 1 teaspoon of brown sugar

  • 1/2 teaspoon of pepper

  • 1 squeezed lime

Preparation

Step 1

Prepare the garlic, ginger and red chillies, slice onions and peppers.


Step 2

Prepare the sauce by mixing the soya sauce, oyster sauce, pepper, lime juice and brown sugar and stir thoroughly, set aside for later.


Step 3

Put a little oil in a wok or large frying pan, cut up the chicken, season with a bit of salt and pepper and cook on a high heat for 2 -3 minutes turning the chicken till slightly brown. Add the chilli, garlic and ginger and cook for a further 5 minutes on a slightly lower heat.


Step 4

Take out the almost cooked chicken and set aside for later. Add a bit more oil to the wok and toss in the peppers and onions and fry on a high heat till soft, then add the mange tout and continue to fry.


Step 5

Add in the almost cooked chicken and mix in the sauce continue to cook for a further 2-3 mins. At this stage you can either add in the fresh noodles and continue to heat the entire dish until noodles are cooked or cook noodles separately and combine at the end. Serve straight away or transfer to containers if food preparation is required.
